台式三杯鸡
这应该是进台湾餐厅必点的一道菜吧,但是每家餐厅做出来的又都会有一点不同,比如有的厨师喜欢用米酒,有的用红酒也不错。所以我们在操作时不需要追求最‘正宗’,而是参照其传统做法做出最适合自己口味的菜品就好啦,烹饪是种创造性艺术嘛,最关键是自己要尝试一下。

  • 生抽80g
  • 老抽20g
  • 米酒200ml
  • 花生油70ml
  • 香油30ml
  • 1块

Steps to make 台式三杯鸡

  • 1.鸡块冷水下锅,放两片姜,水开了焯去血沫捞出沥干。
  • 2.姜切大片,等一下炒干了入味很好吃的;葱切大粗丝,蒜剥皮即可。
  • 3.花盆里的几棵罗勒都被我剪来了,必须出个镜;洗净备用。
  • 4.起锅,加入70ml花生油,下葱姜蒜炒香。
  • 5.下鸡块煸炒,炒干水分,鸡块微微发黄。
  • 6.加入生抽和老抽,翻炒均匀。
  • 7.加入米酒,量稍微足一些避免后面干锅。
  • 8.再放几颗冰糖,米酒本身也有甜味,适当调节糖量。
  • 9.加盖中小火慢慢焖煮半小时左右,锅的密封性要好,不然很快就会干锅而鸡肉还没焖透;越到后面越要注意汤汁的多少和粘稠度,因为糖分较高很容易糊底哦。
  • 10.汤汁粘稠时开盖,加入30毫升香油翻炒调味。
  • 11.出锅前放罗勒叶进去翻炒均匀,独特的香气就出来啦。
  • 12.最后大火稍微收一下汁,不用收太干。
  • 13.装盘上桌,吃鸡喽。
