芷江鸭,按照湖南芷江地区地道做法,口味偏辣,使用芷江当地散养鸭,肉质比较紧实,是真的很美味!

  • 五花肉半斤
  • 小葱一把
  • 一块
  • 洪江甜酱2大勺
  • 大蒜10个
  • 干红辣椒根据口味酌情用量
  • 老抽2勺,酌情添加根据菜色
  • 木姜油根据个人口味添加。味道比较冲,一勺即可
  • 米酒一瓶
  • 藤椒油可以不加。我个人喜好麻一点才加的
  • 八角四个
  • 桂皮一小块
  • 香叶一片

Steps to make 芷江鸭

  • 1.首先准备食材。如图,我已经列出来全部食材!用量大家可以参考图中我用的用量,鸭子是买的芷江当地的散养鸭,还是很新鲜的。
  • 2.首先需要起锅烧油,油要多放点,将鸭掌,鸭头,鸭翅,鸭肠鸭内脏过油,炸制金黄,然后再放入剩余鸭肉,加入干红辣椒,八角、桂皮和香叶,翻炒金黄。再放入五花肉翻炒。炒制金黄后放入姜蒜,米酒,洪江甜酱,老抽,味精,盐,木姜油根据自己口味添加。再根据口味添加适量藤椒油。洪江甜酱是芷江当地专门炒鸭子用的。翻炒一会加水盖过鸭子,盖上盖子闷煮一会。
  • 3.20分钟左右差不多打开锅盖,放入青红椒。
  • 4.快收汁完的时候,放入打好结的小葱,闷一下,给葱入味。
  • 5.最后装盘。撒上白芝麻。
