Steps to make 自制甜酒酿

  • 1.糯米清洗干净,提前一晚上浸泡,泡好的米粒能用手捏碎。
  • 2.沥去水分。
  • 3.蒸格铺上屉布,然后把浸泡好的米均匀地铺在上面,用手指多戳几个洞,大火蒸35分钟左右。
  • 4.蒸好的糯米饭颗粒分明,色泽透明无夹生。
  • 5.冷却后的糯米饭用冷开水拌匀松散开。
  • 6.甜酒曲用了半包,4g。
  • 7.甜酒曲用冷开水搅拌融化。
  • 8.酒曲水放入糯米饭中拌匀。
  • 9.拌匀的糯米饭放入干净的容器中,用勺子压实压平。
  • 10.中间用饺子棒戳一个洞,盖保鲜膜放到温暖处发酵。
  • 11.这几日气温28度,一天半时间就发酵好了。
  • 12.装到无油无水干净的瓶子,放冰箱保存,一个月内吃完。
