Steps to make 咖喱猪扒饭

  • 1.猪扒去骨,把边沿白色筋膜截断,防止猪扒全熟时卷曲。
  • 2.细细锤一遍,把肉拍松,猪扒面积顿时增大1.5倍。撒点盐,放一边备用。做完咖喱汁,再煎猪扒。
  • 3.红萝卜和土豆切小粒,大火煮五分钟(煮到能吃但偏硬的程度),沥水放旁边。
  • 4.用煮土豆红萝卜的水煮咖喱膏。水煮沸,开小火,不停搅拌让咖喱膏融化。
  • 5.咖喱膏完全融化后可能会很稠,酌情加水,再把烫熟的土豆红萝卜放进锅一起煮,盖上盖子小火煮五分钟,中途要至少开盖两次,搅拌均匀以防糊底。咖喱汁完成。
  • 6.这样撒面粉,不会结块(有面粉粒附在猪扒上),裹严实了肉汁不会流失。
  • 7.两面都沾一层蛋液。
  • 8.用面包糠裹严实,最好用手压一下压实点。
  • 9.平底锅多放点油,煎到一边金黄色再翻面继续。
  • 10.猪扒切小块铺在米饭上。
  • 11.浇上咖喱汁。
  • 12.完结撒海苔。
