水晶虾肉月饼
吃多了甜的月饼,来一个咸口味的水晶月饼,外皮筋道,肉馅鲜香,还有一个大虾仁哦***。

Steps to make 水晶虾肉月饼

  • 1.澄粉、玉米淀粉和盐混合均匀。
  • 2.冲入沸水,边冲边用筷子搅拌至基本无干粉,盖盖焖一会。
  • 3.虾仁挑去虾线,加少许的盐和料酒腌制入味。
  • 4.夹心肉剁成末(肥瘦比例2:8)。
  • 5.虾仁切细放入肉末中,加榨菜末、葱姜末、料酒、生抽、蚝油、蛋清,往同一个方向搅拌上劲。
  • 6.面团用手至光滑不粘手,再加入猪油揉匀,此时的粉团很柔软,盖盖子保鲜。
  • 7.分成25g一个的小粉团(粉团没有韧性,所以稍多点。月饼模具是50g)。
  • 8.粉团压扁,包上虾仁肉馅,还放了一整个虾仁。
  • 9.像包包子一样收好口,揉圆。
  • 10.模具抹上一层淀粉,放入月饼胚,压成月饼的形状。
  • 11.垫上油纸,放到蒸架上。水开后上锅蒸15分钟,待饼皮变透明即可关火,开盖取出。
  • 12.色泽透明。
