  • 细砂糖15G+40G
  • 玉米油40G
  • 牛奶60G
  • 鸡蛋4个(240G左右)
  • 柠檬汁几滴

Steps to make 戚风蛋糕

  • 1.将15G砂糖加入到4个蛋黄中,拌匀。
  • 2.加入玉米油拌匀。
  • 3.加入牛奶拌匀。
  • 4.筛入低粉筋拌匀至无颗粒。
  • 5.拌匀后的状态。
  • 6.4个蛋白中加入柠檬汁,分三次加白糖。由低速慢慢提到高速。打至干性发泡。
  • 7.取三分之一加入到蛋黄糊中,采用J字法翻拌均匀后,倒入剩余蛋白糊中继续拌匀。
  • 8.拌匀后倒入模具中,轻震 三下,震出气泡。放入预热150度的烤箱中,150度烤25~30分钟,转170度烤25分钟左右。如果表面上次太快,可迅速加盖锡纸。取出后迅速倒扣至凉,取出即可!
