红烧排骨
做这个菜我用的是卤好的排骨,很香!

    Steps to make 红烧排骨

    • 1.先将排骨洗净,在开水锅里氽去血水。
    • 2.除去血水的排骨捞出放入凉水中浸泡片刻。
    • 3.将除白砂糖以外的调料放入高压锅中,加入适量的清水或老卤汁,放入排骨,通电,卤肉。
    • 4.卤好的排骨,捡出待用。
    • 5.开火,倒入少量的食用油,放入两勺白砂糖,用小火慢炒糖色。
    • 6.用铲子要不停地搅拌,至糖溶化,炒至变成漂亮的金黄色。
    • 7.炒至金黄色时,要快速倒入排骨翻炒,使每一块排骨都挂上漂亮的金黄色汁液,再加入刚才的卤汤,盖上盖子烧10分钟左右;(记得要滤掉调料哈!因为翻炒的那一步需要快速进行,所以没能拍上照,不好意思啊!)。
    • 8.10分钟左右后,大火收汁,关火。
    • 9.成品图,很香哈!我老公一次吃了大半锅,呵呵!!
