蜗牛卡士达酱面包

Steps to make 蜗牛卡士达酱面包

  • 1.将除黄油以外的所有原料放在一起揉至面筋扩展、表面光滑。加入黄油揉至扩展阶段。
  • 2.放温暖处进行基础发酵。
  • 3.基础发酵结束,将面团取出排气,分割出38克和10克的面团各8个,分别滚圆后松弛15分钟
  • 4.松弛后的大面团擀成椭圆形,翻面后压薄底边,自上而下卷成条,然后搓长。
  • 5.将长条盘成卷,将小面团搓成长长的锥形。
  • 6.将锥形面团放在旁边,做成蜗牛的样子,移至烤盘上,放温暖湿润处进行最后发酵。
  • 7.发酵结束,表面刷蛋液,顺面团走向挤上卡士达奶油装饰。
  • 8.入预热180℃的烤箱,中层,上下火,13分钟左右。
  • 9.出炉晾凉后,用巧克力笔画上小蜗牛的眼睛和嘴巴即可。
