全麦葡萄干排包

  • 清水140克
  • 酵母3克
  • 白糖30克

  • 红提干100克

Steps to make 全麦葡萄干排包

  • 1.面粉、鸡蛋、清水、酵母、白糖、盐入面包桶内桶中,启动和面程序
  • 2.待面团光滑后,加入软化切块的黄油,继续启动和面程序
  • 3.面团揉到能扯出大薄片即可
  • 4.面团收圆,覆盖一层保鲜膜,在桶中进行基础发酵
  • 5.待面团发至2.5倍大时,在面团顶端中间用手指蘸干面粉戳洞,不回缩不塌陷,表示发酵成功
  • 6.面团取出,置于案上,揉圆、排气,用电子秤分成8等份,分别揉圆,保鲜膜覆盖,松弛10分钟
  • 7.红提干提前清水洗净,沥干水,切碎
  • 8.取其中一个小面团,按扁,擀成长条状,上铺适量红提干
  • 9.卷成长卷
  • 10.其它面团依次处理,排在不粘烤盘内,覆盖保鲜膜,进行二次发酵
  • 11.待到二倍大时,表面刷蛋液,撒白芝麻
  • 12.入预热好的烤箱中,200度,18分钟左右
  • 13.出炉,晾架上晾凉
  • 14.手撕食用
  • 15.很筋道
  • 16.拉丝效果也很好
