也许你会问这与可爱的螃蟹面包有什么关系,你看过电影《欢颜》吗,这属于我们那个年代的经典电影。我还没上小学时就已经是个典型的琼瑶迷。欢颜让我记住了胡慧中、插曲《橄榄树》,还有就是螃蟹---那个童谣,螃蟹一呀爪八个,两头尖尖这么大的个......

经典不会因为时间而淡化,只会因为时间而更加经典。

  • 高筋粉250g
  • 低筋粉50g
  • 无盐黄油15g
  • 鸡蛋液30g
  • 酵母3g
  • 白砂糖30g
  • 清水150ml
  • 奶粉15g

Steps to make 记忆碎片:螃蟹面包

  • 1.所有材料称量好,除黄油外倒入面包机内筒。
  • 2.选择发面工作档和面。
  • 3.20分钟后,将黄油放入,继续执行完揉面。
  • 4.第一次发酵到原来的2倍大,用手轻轻将面团挤压排除气泡。
  • 5.取出面团分成所需要的若干份数,揉成圆形,进行15分钟中间发酵。
  • 6.取大面团50g/个、中等面团10g/个、小面团5g/个,分数1:1:7
  • 7.将大面团整型为倒三角。
  • 8.中等面团搓搓成水滴形状,大头剪口做蟹敖,再取一个小面团同样做成蟹敖;小面团6个搓成梭子形状,紧贴在蟹壳上做蟹爪。
  • 9.将面团整好形状,做出若干份面包生坯。
  • 10.面包生坯放入烤盘,放入烤箱进行最后发酵。
  • 11.发酵完成后取出,在表面刷一层蛋液,附上2颗面球,点缀上紫米做眼睛。
  • 12.烤箱预热,180度,中层、上下火、15分钟,烘烤上色即可。
