Steps to make 麻辣小龙虾

  • 1.第一步:清洗小龙虾是关键,将盐、白醋和小苏打放入盆内,泡几分钟,可以晃动下盆内的小龙虾,这样清洗会更容易,再用牙刷刷虾背、虾脚和虾腹部。
  • 2.第二步:清洗完小龙虾,用剪刀剪掉虾头的三分之一,去掉虾胃和虾头里的脏东西,再用手抓住三只尾巴的中间那个,旋转后拽出虾线;用手抓住虾脚(除了最大两支),轻轻一拉,连着虾腮的脏东西一并扔掉,再清洗下处理干净的小龙虾,注意不要洗掉虾黄噢!
  • 3.第三步:准备调料,如图所示。
  • 4.第四步:热锅冷油,把小龙虾倒入锅中,轻轻翻炒,小龙虾颜色变红后捞出。
  • 5.第五步:锅里留点油,依次放入干辣椒花椒姜葱蒜中小火炒香,再放入豆瓣酱继续炒香。
  • 6.第六步:将煸炒过的小龙虾倒入,继续翻炒。
  • 7.第七步:翻炒后加入啤酒,刚刚盖过小龙虾即可。
  • 8.第八步:盖上锅盖中小火煮十分钟。
  • 9.第九步:中间煮的时候一定注意下锅里的情况,差不多快收汁的时候,倒入洋葱,加耗油白糖提鲜,试味。
  • 10.第十步:起锅,撒上香菜,盛盘。
