荷花酥
荷花酥是浙江杭州著名的传统小吃。“出淤泥而不染”是人们对荷花高雅洁丽品质的赞誉,用油酥面制成的荷花酥。形似荷花,酥层清晰,观之形美动人,食之酥松香甜,别有风味。

荷花酥是宴席上常用的一种花式中点,给人以美的享受。

Steps to make 荷花酥

  • 1.面粉150g如猪油75g和成油酥
  • 2.面粉100g、猪油15g、水50ml和成白面团。另面粉100g、猪油15g、色素少许、水50ml和成红面团(稍黄些)
  • 3.两色面团搓长条,
  • 4.分别搓成圆形
  • 5.将油酥分成和面团相同数量
  • 6.将一个白面团按扁,包上油酥收囗
  • 7.擀成椭圆形
  • 8.卷起
  • 9.红面团也包上油酥,饧15分钟
  • 10.饧面时,红白面团用保鲜膜盖上
  • 11.面团竖放,擀长条,卷起,饧15分钟
  • 12.面卷两边向中间折
  • 13.擀圆,红面团放上面,再次擀下
  • 14.椰蓉100g、油50g、糖50g、牛奶50g和匀
  • 15.分成馅料
  • 16.包上椰蓉馅
  • 17.成圆形,用刀在面团表面切花瓣,切口深度差一层到椰蓉馅为最好
  • 18.油烧开,中小火炸至
  • 19.完成
