烤鱼在泸州流行了差不多20年,经久不衰。做为一名食客,我对泸州合江烤鱼情有独钟。每一次回泸州,都要到新马路附近一家烤鱼店吃烤鱼。我基本吃过一次,就会做出来。这道香辣烤鱼,我加了自己很多喜欢的,豆鼓,花生米,鱼起盘的时候,我用了花椒面,味道确实爽,尽管这几天天天基本吃鱼,昨天鱼2个人还是一会就吃光啦

  • 1.鲤鱼把鱼腥线去掉,从背把鱼破开
  • 2.鱼背划刀,方便入味
  • 3.用盐巴,姜丝,葱段,拍破的大蒜,鸡精码味,腌制一个小时
  • 4.烤盘刷油;下边垫葱段,姜蒜
  • 5.准备先烤鱼肚;鱼先刷油,在在鱼表面,撒少量的盐,海椒面,花椒面,孜然;再刷油【刷油是为了鱼嫩,香,我用了是混合油,就是猪油加瓜子油】
  • 6.烤箱上面管子我用了230度,下边管子我用了180度。烤7分钟
  • 7.把烤鱼翻面,继续,在在鱼表面,撒少量的盐,海椒面,花椒面,孜然;再刷油【比烤鱼肚子稍微多放点】
  • 8.烤5分钟
  • 9.烤好的鱼
  • 10.锅内放油,还加点牛油,把豆瓣酱,泡海椒,姜蒜米,炒香,炒上色;冒汤
  • 11.烧好的烤鱼底汤,倒在烤鱼盘,就差不多可以啦
  • 12.炝锅。【干海椒先用水泡涨,这样海椒才不变色,好看】把油烧7成热,下干海椒,花椒,快炸,马上淋鱼背上;撒葱花,芝麻,海椒面,花生
  • 13.放电磁炉,微火,3分钟
