喜羊迎春—彩绘蛋糕卷
彩绘蛋糕卷,是在蛋糕卷上,用蛋糕糊描绘出喜欢的图案,我做的是:喜羊迎春。

  • 泡打粉1/2小勺
  • 牛奶55克
  • 低粉90克
  • 砂糖(放蛋清里)80克
  • 玉米油55克

Steps to make 喜羊迎春—彩绘蛋糕卷

  • 1.准备好两个干净无油无水的容器,将蛋清和蛋黄分离;
  • 2.分离好的蛋黄;
  • 3.把蛋黄和细砂糖混合后用打蛋器打发。分两次加入玉米油(无味的植物油都可以)。每加入一次都用打蛋器搅打到混合均匀再加下一次。加入完玉米油的蛋黄仍呈现浓稠的状态。加入牛奶,轻轻搅拌均匀。
  • 4.将低筋面粉和泡打粉混合后筛入蛋黄里,用橡皮刮刀翻拌均匀,成为蛋黄面糊。
  • 5.开始打发蛋白:将80克的砂糖分三次加入打发的蛋白中,最终将蛋白打发到湿性发泡的状态。(提起打蛋器后,蛋白拉出弯曲的尖角)
  • 6.先盛1/3蛋白到蛋黄碗里,翻拌均匀,(从底部往上翻拌)。
  • 7.再将剩余的蛋白都放到蛋黄里,翻拌均匀。(从底部往上翻拌)
  • 8.取少量的蛋糕糊放入小碗里,滴入红色色素、棕色色素,搅拌均匀;
  • 9.分别将红色蛋糕糊、棕色蛋糕糊装入一次性裱花袋,在烤盘的油纸下垫上图案,用以上两色蛋糕糊描出图案,放入烤箱180度,烤3分钟,取出晾凉;
  • 10.再将原来的蛋糕糊全部倒在有图案的烤盘里,刮平整,震几下后,赶走气泡,放入烤箱中,再180度,烤15~20分钟;
  • 11.烤好后扣在晾架上稍凉后,翻面朝上,抹上果酱;
  • 12.用油纸把卷好的蛋糕卷起来,定型,冷藏半小时后切片,即可。
