Steps to make 伤心凉粉

  • 1.准备食材。
  • 2.准备100g豌豆淀粉和100g水混合均匀成淀粉水备用。
  • 3.锅中倒入600g清水,煮开后转小火。
  • 4.倒入淀粉水,边倒边搅拌,手速要快,搅拌至锅中的淀粉变得浓稠,直至色泽均匀且锅中有大气泡翻腾时关火。
  • 5.容器中刷薄薄一层油。
  • 6.将煮好的淀粉倒入容器中,放进冰箱冷藏2~4小时。
  • 7.冷藏后取出,在案板上脱模,切成条。
  • 8.大蒜和小米辣用料理机打成沫,放上一勺辣椒粉,浇上一勺热油搅拌均匀。
  • 9.再加入两勺酱油,两勺醋,一小勺白糖,少许鸡精,半小勺盐搅拌均匀。
  • 10.将调味料浇在盛凉粉的盘里,撒上花生碎和香菜就大功告成了。
  • 11.当凉粉端上桌,那光泽、那香气、那酱汁已经在瞬间撩拨起了我的胃。冰冰凉凉的口感、酸爽麻辣的味道真叫人欲罢不能,一口接一口,好吃到停不下来。
  • 12.吃起来又麻又辣很过瘾,我做的这个酱料可以凉拌很多菜,大家也可以根据自己的口味改变。
