Steps to make 粉皮烧鸭

  • 1.准备好鸭子和粉皮。
  • 2.粉皮提前泡发。
  • 3.鸭肉切成大块。
  • 4.凉水上锅,加姜片和料酒焯水三分钟。
  • 5.过凉水清洗干净浮沫。
  • 6.起锅烧油。
  • 7.加冰糖熬糖色,糖成微黄色时。
  • 8.下入鸭肉翻炒断生。
  • 9.加入豆瓣酱翻炒上色。
  • 10.加入桂皮、八角、香叶、干辣椒翻炒出香味。
  • 11.加适量的水,大火煮开,转小火焖炖30分钟(根据鸭子的老嫩程度适当调整时间)。
  • 12.炖好的鸭子。
  • 13.加入粉皮,翻炒均匀,再焖5分钟。
  • 14.加少许盐(因为家里豆瓣酱,已经有一部分盐了)、鸡精、蚝油、胡椒粉、米酒调味,翻炒均匀,最后加入葱段。
  • 15.起锅装盘即可。
