白萝卜羊肉汤

Steps to make 白萝卜羊肉汤

  • 1.炖羊肉汤第一步:将羊排加入清水中,泡一泡,待水变浊了再换水,一般换二三次水。无论你是焯水后入炖锅或是直接入锅,这一步都需要这样泡水。这是第一点。
  • 2.备好其他配料。姜拍一下,萝卜切小片。可以切厚一些的萝卜片或滚刀块。加入白芷,这是第三点。
  • 3.第二点:冷水入锅,多加一些清水。不需要焯水,一定要多加清水。
  • 4.然后,大火烧开,将开之时,如上图,会有一层浮沫,此时可以将它除去。用勺子撇掉。不要着急,边烧边滚开,泡沫会浮于表层。
  • 5.边烧边去浮沫。
  • 6.浮沫除去之后加入姜、葱、红枣、白芷继续大火炖制。
  • 7.全程需要中大火,保持滚开状态,这是第四点。这样汤汁才会奶白浓郁。炖至40分钟左右,加入白萝卜块同炖,一个小时左右已经烂了。最后,可以加入一些枸杞,婆婆家没有,就不放。加盐调味即可。当然,还可以加入一些白胡椒粉。
