自制红葡萄酒
我不爱喝酒,红酒,白酒,洋酒都一样,每次聚餐酒场上,酒给我的印象不是享受是任务。
可妈妈自已酿的酒完全不同,无论是颜色香气还有口感都让我陶醉,经常是喝完一杯不由自主再续一杯,喜欢淡淡的红色,更喜欢口中纯正的葡萄酒香。
第一次跟妈妈学着自制葡萄酒,从葡萄入瓶封存到开瓶品尝整整20天都在期待中度过,不过美酒入口时就会感慨这样的等待真是太值了,明年的葡萄季继续!

Steps to make 自制红葡萄酒

  • 1.葡萄逐个剪下,冲洗干净后用淡盐水浸泡20分钟,再冲洗干净放在阴凉处晾干。
  • 2.取干净的大盆,手清洗干净后把晾干的葡萄逐个捏碎,果肉果皮分离。
  • 3.按6:1的比率加入白糖。
  • 4.用筷子将白糖与葡萄搅拌均匀。
  • 5.将拌好的葡萄连汁带肉全部装进无水无油干净的玻璃瓶里,装约7分满密封好室温下保存。
  • 6.大约20天左右,如果瓶内没有气泡再产生时就是已经全部发酵好了。
  • 7.打开瓶盖用漏勺小心地将浮在上层的果肉果皮捞出,再挤压出里面的汁水。
  • 8.小心地将酒倒出,过滤好密封在玻璃瓶中保存(为防止沉在瓶底的果肉沉淀物浮起来也可用干净的软管用吸的方式将酒水抽出来)。
