Steps to make 大理石纹轻乳酪蛋糕

  • 1.所有材料。准备工作,材料称重,6寸圆模如果是活底底包锡纸内壁刷黄油,蛋清蛋黄分离,蛋清送冰箱冷藏
  • 2.奶油奶酪室温软化后隔热水轻微搅拌加淡奶油酸奶,搅拌至无颗粒的柔顺细滑(需要1,2分钟)
  • 3.离火分次加入蛋黄搅拌均匀
  • 4.加过筛低粉,用橡皮刮倒从低往上,类此炒菜一样搅拌(切勿画圈搅拌)
  • 5.此时奶酪糊就变稀了如冰箱冷藏半个小时一个小时左右,待奶酪糊粘稠
  • 6.冷藏奶酪糊的时候打蛋清,蛋清从冰箱拿出来滴几滴白醋分三次加糖蛋清用电动打蛋器打至湿性发泡,如图,微有纹路拎起有倒三角形下垂
  • 7.取三分之一蛋清与奶酪糊搅拌(方法如上,切勿画圈)均匀后倒入剩余蛋清搅拌均匀,入模(这时候这个奶酪蛋糕糊是有点粘稠的,搅拌起来有少许阻碍的)
  • 8.巧克力和淡奶油放到保鲜袋里放到温水里,待其软化,用手使其混合均匀
  • 9.剪小口横条纹式挤到蛋糕糊上,用牙签快速上划,下划…… 烤箱预热后水浴,模具可以直接放到水里,怕模具漏水也可以隔网下面托盘防水烤箱上下货160度70分钟,待表面凝固上色摸上去下面没有流动的感觉
