法式洋葱汤
洋葱汤的出现可以追溯到18世纪,据说当时,国王路易十五打猎迷失方向,直至深夜方能回到林中小屋。然而屋中仅剩奶酪、洋葱和干面包等食材,现实状况不由得这位国王多加挑剔,便将这些剩料都放在锅中烹饪。
许是魔法的出现或是饥饿感作祟,这款材料简单的汤成功征服了国王的味蕾和胃口,回到皇宫依旧心心念念让御厨们复刻出相同味道,这款偶然出现的美味便流传至今。

  • 红萝卜1根
  • 洋葱半个
  • 芹菜1根
  • 白萝卜半根
  • 洋葱200克
  • 大蒜1/2瓣
  • 橄榄油10ml
  • 高汤250ml
  • 1小勺
  • 黑胡椒一小勺
  • 法棍切片1片
  • 大蒜1/2瓣
  • 马苏里拉奶酪20克

Steps to make 法式洋葱汤

  • 1.高汤部分:将所有蔬菜高汤的材料放在锅里,加入水至末过材料。
  • 2.蒸烤箱水箱加满水。
  • 3.把装有蔬菜高汤的锅放蒸烤箱下层,选择蒸功能,设置110℃蒸制1小时。
  • 4.蒸制完成后去除蔬菜高汤,滤出汤汁(约700g)备用。
  • 5.浓汤部分:洋葱去皮,切成均匀的细丝。
  • 6.1/2瓣蒜切碎,热锅凉油,将洋葱大火炒蔫后放入蒜末。
  • 7.洋葱稍微开始上色后,加入少量水,并用锅铲不停翻炒,随着洋葱颜色变深,继续少量补水,直到将洋葱炒成均匀的焦糖色。
  • 8.将高汤倒入锅中,大火煮开后撇去浮沫,转中火煮15分钟,关火后加盐和黑胡椒调味。
  • 9.面包表面涂上蒜汁和橄榄油后切粒,放入用上下火功能预热至180℃的烤箱中,烤制10分钟,烤好后取出面包,让烤箱继续加热。
  • 10.洋葱汤盛入耐热容器中,将烤好的面包片放在汤上,撒上马苏里拉奶酪。
  • 11.继续放入蒸烤箱中,使用上下火功能200℃度,烤制8分钟。
  • 12.烤至奶酪变金黄色,明显闻到洋葱香即可出炉食用。
