酸汤肥牛

  • 肥牛片250g
  • 金针菇1把
  • 绿豆粉丝半把
  • 红尖椒1根
  • 海南黄灯笼辣椒酱2大勺
  • 4瓣

  • 料酒1大勺
  • 泡山椒4-5个
  • 少许
  • 1勺
  • 泡山椒汁2勺
  • 胡椒粉少许
  • 白醋1勺

Steps to make 酸汤肥牛

  • 1.肥牛提前解冻。
  • 2.姜蒜切碎、红尖椒切小圈、泡山椒切段。
  • 3.金针菇去根洗净,粉丝提前泡软。
  • 4.开水锅中倒入几滴油,放入金针菇、粉丝分别焯熟。
  • 5.沥干放入大碗中铺好。
  • 6.另倒入开水,放入肥牛片焯至变色马上捞出沥干备用,焯肥牛的水用滤网滤去浮沫备用。
  • 7.锅中倒入少许油,放入姜蒜末爆香,放入黄灯笼辣椒酱、泡山椒段、泡山椒水翻炒一分钟左右。
  • 8.倒入煮肥牛的汤、加入料酒大火煮开。
  • 9.加入胡椒粉、盐、白醋、糖调味,放入焯好的肥牛片略煮关火。
  • 10.将肥牛片及汤汁倒入铺了金针菇的碗中。
  • 11.表面撒红椒圈点缀,淋入少许热油在红椒圈上即可。
