芥末墩儿,老北京的传统小吃,在家附近有个老北京涮羊肉,是地道的北京人开的,味道一级棒,那个老大爷向我推荐了芥末墩儿,说一定要品尝一下,唉,作为吃货的我是没挡住诱惑啊,回到家就开始在网上搜索做法,第一次,失败了,做完的是苦的,开始以为是腌的时间短,可是过了差不多半个月再吃,还是苦的,最终以失败告终了;前两天看见冰箱里还有白菜,还有上次做的时候剩下的芥末,一定要再试制一次,最后终于成功了,哈哈。

Steps to make 芥末墩儿

  • 1.所有要用的材料
  • 2.白菜切成大段,只要帮子的部分,菜叶可以用来炒着吃
  • 3.白菜分开用线绳捆成小墩儿
  • 4.芥末粉放到碗里,用开水烫一下,然后放到凉水里冷却
  • 5.把白菜墩儿放在漏勺里,然后用勺子在上面浇热水,反复浇三四次,千万不要把白菜放水里煮,那样的白菜就没有嚼劲了
  • 6.烫好的白菜放在没有油的容器里,趁热在上面抹上冷却的芥末粉
  • 7.再在上面抹上一层白糖
  • 8.再淋上米醋
  • 9.半成品的芥末墩就做好了,放到冰箱里,四五天以后就可以吃了
  • 10.成品芥末墩,吃的时候用没有油的筷子夹出来,然后倒出来点汤,里面放点盐,溶解以后淋在芥末墩上,味道真的不错哦。
