红烧黑鱼段

  • 1.黑鱼去头去尾,中间切四大块,两块小的是鱼头处的
  • 2.用厨房纸巾将鱼表面清水擦干,鱼表面抹上干面粉
  • 3.铁锅烧热,用姜片抹一下,然后倒入油,待油八成热时放入鱼块,中小火慢慢煎炸
  • 4.依次放入剩余的鱼块,先入锅的可以翻身了
  • 5.待鱼块煎至两面金黄即可盛出
  • 6.去一个小碗,放入豆豉,少许郫县豆瓣,一勺料酒,两勺生抽,一勺老抽,一勺糖,
  • 7.加满水
  • 8.另起油锅
  • 9.放入炸好的鱼,倒入佐料汤汁,中火炖
  • 10.切葱姜蒜
  • 11.炖鱼的锅中放入葱姜蒜,再炖10分钟收汁
