蛋黄焗薯丁
“蛋黄焗薯丁”必须使用咸蛋黄才能炒制出翻砂的效果。一般多用咸鸭蛋黄,如果有其它的咸蛋黄也可以使用。炸制后的土豆外焦里糯,又裹附一层香香的咸鸭蛋黄,既可以下酒,又可以下饭,相当地不错。

Steps to make 蛋黄焗薯丁

  • 1.主辅料: 土豆、熟咸鸭蛋。
  • 2. 煮熟的咸鸭蛋,取蛋黄备用。
  • 3. 把土豆切丁。放入清水浸泡10分钟。捞出沥干水分。
  • 4. 锅中放油,5成热,放入土豆丁炸制。炸制到土豆丁稍稍挺实,捞出。
  • 5.油温提高到7成热以上,放入土豆丁复炸一次。炸制成金黄色即可捞出,备用。
  • 6.锅留少许底油,放入咸鸭蛋黄,小火慢慢炒制。炒制到鸭蛋黄没有颗粒,蓬松翻砂才行。
  • 7.放入备用的土豆丁。
  • 8.关火。快速翻炒,可以用翻勺来完成。使咸蛋黄均匀的裹附在土豆丁上即可。
  • 9.出锅装盘。
