    Steps to make 干煸芸豆

    • 1.把瘦猪肉切成细细的肉末,也可以买现成的猪肉馅,但绞的肉馅口感要差些。
    • 2.切好的肉末里撒少许精盐、淀粉,倒入适量的酱油腌渍20分钟,入味。
    • 3.嫩芸豆洗净后,去丝,掰成5公分长的小段。
    • 4.红尖椒洗净后,切斜段。
    • 5.大蒜切薄片,生姜切细丝。
    • 6.锅里坐油,油八成热时倒入掰好的芸豆段,炸至芸豆皮起皱即可捞出控油。
    • 7.锅里留底油,放入姜丝、大蒜片、豆豉爆香。
    • 8.倒入切好的瘦猪肉末,翻炒。
    • 9.等猪肉末炒散后放入红椒段,继续翻炒。
    • 10.倒入控好油的芸豆段,大火翻炒。
    • 11.加少许精盐后翻炒至没有水汽即可。
