圣诞小饼干
“叮叮当、叮叮当、铃儿响叮当... ...”,进入到12月份,圣诞节还未来临之前,就看到各大商场已经充满了浓郁的圣诞气息,到处都洋溢着节日的热闹气氛,好豆网到处是圣诞的气息,看到美天的朋友们做的小饼干,我也心痒痒的,五颜六色的小饼干更是喜欢,但自己做的饼更注重健康,所以我没加任何色素,看着不那么显眼,但味道一点也不逊色,小朋友看到更是喜欢。

  • 鸡蛋液20g
  • 低筋面粉130g
  • 蛋白8g
  • 糖粉50g
  • 柠檬汁几滴

Steps to make 圣诞小饼干

  • 1.黄油提前切成小块,放在室温软化,然后进行打发
  • 2.加入糖粉,用打蛋器的打蛋头搅拌一下(无需插电),让糖粉和黄油混合一起,这样搅打过程中,糖粉不会到处乱飞,电动打蛋器先开低速打
  • 3.待糖粉和黄油混合后,开中速搅打,搅拌至体积变大,颜色发白(此过程大约需要2-3分钟左右)
  • 4.分3次加入蛋液, 每加一次都要搅拌到蛋液完全与黄油融合
  • 5.一次性的筛入低筋面粉
  • 6.用刮刀翻拌,揉成团,用保鲜膜包好,冷藏至少30分钟左右
  • 7.冷藏的时候正好做蛋白霜,将蛋白放入容器中,必须要无油无水,加入几滴柠檬汁,打发至粗泡
  • 8.将糖粉分三次筛入蛋白中,每次都用打蛋器将糖粉和蛋白搅拌均匀
  • 9.打到滴落的线条不容易变平整就可以了
  • 10.将调好的蛋白糖霜分成2份,留1份白色,一份加入抹茶粉(可能我抹茶粉加多了,有点小失败)并在出口处剪2mm的小口,千万不能剪大
  • 11.拿出冷藏好成型的饼干面团,案板上放上一张油纸,将面团放在油纸上,面图上再盖一层保鲜膜,擀成3mm--5mm左右厚。擀好后,用饼干模具刻出自己喜欢的形状
  • 12.烤箱提前预热180度,把做好的饼干放入烤盘中,饼干之间要留一点缝隙,让其受热更均匀,也不会让烤好的饼干黏在一起,然后放入烤箱,上下火,中层180度8-12分钟(或见饼干均已上色即可)。
  • 13.开始装饰吧!取一块饼干,想出装饰图案,涂画好后,将饼干放入通风处彻底晾干即可。
