蛋黄饼
无油版,很健康,非常适合小朋友吃.使用君之的方子,真的是太棒了.(之前烤制马卡龙只用蛋白.多出来好多蛋黄,正好用来制作了这款健康的小饼干)

  • 低筋面粉90克
  • 鸡蛋1个(约50克)
  • 细砂糖50克
  • 泡打粉2克

Steps to make 蛋黄饼

  • 1.准备好所有的材料...
  • 2.低筋面粉和泡打粉混合后过筛备用.
  • 3.蛋黄、鸡蛋装入干净无水无油的打蛋盆中,用打蛋器打发。打发的过程中分三次加入细砂糖。
  • 4.打发到状态如图...用蛋糊在盆中写一个8字,8字停留五六秒不会消失即可...切记哦,一定要充分的打发好哦
  • 5.将过筛的低筋面粉与泡打粉的混合物倒入打发好的蛋液里
  • 6.用橡皮刮刀从底部往上翻拌的方式将面粉与蛋液混合均匀,不要画圈搅拌。翻拌的动作要迅速,幅度要大一些,使面粉与蛋液尽快的拌匀成为面糊。如果时间过长或画圈搅拌,都会导致打发好的蛋液消泡
  • 7.拌匀的面糊应该是顺滑、膨松的状态.(预热烤箱)
  • 8.我们装入一个裱花袋中...
  • 9.在垫子上,或是烤盘中挤出一个小圆饼的样子....
  • 10.送入预热好的ACA烤箱中....上火150 ..下火140度..烤制15分钟左右就好了.....
