很好吃的蛋糕卷

  • 白糖20+30g
  • 牛奶35g
  • 玉米油35g
  • 低粉40g
  • 可可粉20g

Steps to make 可可O卷

  • 1.分离蛋黄与蛋清,装蛋清的盆必须无油无水。蛋黄加白糖20g搅拌到白糖融化
  • 2.加入玉米油拌匀
  • 3.加入牛奶拌匀
  • 4.筛入40g低筋面粉
  • 5.拌成细腻的面糊,备用
  • 6.蛋清分3次加入白糖,打湿性发泡,拉起打蛋器有长弯钩的状态
  • 7.取1小勺蛋黄糊与2勺的蛋白霜拌均匀
  • 8.装入袋子,剪个小口,在铺有烤纸的烤盘内挤出自己想要的花纹(我随便拉了几条斑马纹),放入提前预热好的烤箱180度,烤1—2分钟,取出
  • 9.蛋黄糊中筛入20g可可粉
  • 10.用蛋抽拌匀
  • 11.分3次与蛋白霜翻拌均匀,动作尽量快点(忘记拍照了)。因为我发现可可粉它会消泡
  • 12.拌好的可可面糊,倒入烤有斑马纹的烤盘内,放入预热的烤箱,180度,中层 20分钟(温度时间供参考)
  • 13.出炉后扣过来,撕去底部的油纸,晾凉后再翻过来,斑马纹在底部,抹上打发好的奶油,卷起来放冰箱冷藏半天的可以了
  • 14.奶油的顺滑香甜,刚好中和的可可的微苦。味道太赞了!
