Steps to make 凉拌猪蹄

  • 1.主料:猪蹄2个
  • 2.副料:青、红椒、葱、香菜、大蒜、姜
  • 3.猪蹄分割成小块,块越小越好,炖的时候容易成熟,也容易入味
  • 4.青、红椒、葱、香菜、大蒜切末备用
  • 5.锅中加水,放入分割好的猪蹄块,加入大蒜、姜、葱、花椒、大料、红辣椒
  • 6.水烧开后,撇去浮沫,再盖上锅盖
  • 7.转成小火慢炖40分钟
  • 8.猪蹄炖好后取出,过下凉水,冲掉表面油脂,放凉备用
  • 9.取一容器,加入炖好的猪蹄、再加入青、红椒、葱、香菜、大蒜末
  • 10.再依次加入红油
  • 11.加入香醋
  • 12.加入生抽
  • 13.加入鱼油
  • 14.加入胡椒粉
  • 15.加入盐
  • 16.加入蒜蓉辣酱拌均即可
