甜蜜伴侣——焦糖浆(奶油焦糖浆)
焦糖浆真是个好东西,尤其是奶油焦糖浆,烘焙的时候用得上,喝咖啡、吃蛋糕的时候加上一点点,也非常地提味,口感立即丰富又甜蜜了许多。
上次做了一次奶油焦糖浆,可是当时相机外出了,没有拍照,这次做的时候发现淡奶油刚好用光光了,只能做一些单纯的焦糖浆。虽然没有加奶油,但是口味也不错。

奶油焦糖浆和普通焦糖浆的做法相同,只是最后一步中一个加入的是煮沸的开水,一个加入的是煮开的淡奶油。仅此而已!

Steps to make 甜蜜伴侣——焦糖浆(奶油焦糖浆)

  • 1.凉水和白糖同时加入小锅中,小火加热。不用搅拌。
  • 2.随着温度的升高,白糖开始融化,锅里开始冒小泡。
  • 3.气泡起来越多。
  • 4.继续加热,过一会锅里的白糖溶液开始变色,发黄。
  • 5.继续小火加热,直至出现的红色,慢慢摇晃小锅,使颜色均匀。
  • 6.当糖液出现深红色时,关火,把刚刚煮沸的开水加入,锅里会剧烈沸腾,此时一定要小心,注意不要被烫伤。把锅放入加有冷水的容器中,直至锅里的糖浆完全冷却下来即可。
