芸豆卷
芸豆卷是北京最传统的小吃之一,它口感绵软细腻、馅料香甜爽口。吃起来入口即化却留有浓郁的豆香,令人回味悠长。至于芸豆卷的身世,就更是值得仔细来说一说。芸豆卷不仅和诸多北京小吃一样,有着宫廷小吃的光环,它的身份还更具有传奇色彩。话说有那么一天,慈禧在北海的静心斋乘凉,忽然听到红墙外有一阵叫卖声,她便问:“那是干什么的?”当差的答道:那是卖芸豆卷的。慈禧一听,这东西新鲜啊,就让当差的把那个人叫了进来。那卖芸豆卷的小贩十分聪明,便跪着呈上了自己做的芸豆卷让慈禧品尝。慈禧老佛爷一吃,这芸豆卷果然香甜爽口,入口即化,便喜欢上了芸豆卷的味道。于是就把这个人留在了宫中,专门为她制作芸豆卷了。
这芸豆卷从民间传入了宫中,之后又由宫中传回了民间,可谓是身世曲折。而如今,市面上却很少见芸豆卷的身影了。

    Steps to make 芸豆卷

    • 1.芸豆洗净,用开水浸泡过夜后去皮。
    • 2.锅中清水烧沸倒入芸豆,撇掉煮沸过程中浮起的白色泡沫。
    • 3.调至中小火继续煮至芸豆开花酥烂。
    • 4.捞出控去水分,上蒸屉再蒸制约20分钟。
    • 5.将芸豆碎瓣用细筛过滤成小细丝。
    • 6.倒在干净的湿布上,包起反复揉搓成泥团。
    • 7.用光滑的刀面反复抹平,切去边角成长方形。
    • 8.芸豆泥上抹一层细豆沙,中间撒上砂糖。
    • 9.拿起布从两端卷起,在中间汇合。
    • 10.形成圆柱形,双手轻压整形。
    • 11.切去两端不齐的边,再切块装盘即可。
