糖醋鲤鱼

Steps to make 糖醋鲤鱼

  • 1.鲤鱼收拾干净后,去掉后面的腥筋,用刀倾斜45度角把鱼均匀斜切开口
  • 2.加盐一勺,用手在鱼身上下里外均匀摸开
  • 3.盆里放入面粉2大勺、淀粉1勺、鸡蛋1个、清水1碗,调成糊后将鱼放入
  • 4.提着鱼尾将鱼全身挂上面糊
  • 5.拿出鱼后在鱼身两面都裹上干面粉,然后抖掉多余的面粉
  • 6..锅内放入足够的油,油七成热时将鱼弯成弧形放入,小火炸,炸时可用筷子按住鱼尾
  • 7.将鱼两面炸至微黄,鱼熟透即可捞出,稍微晾一会
  • 8.再回锅炸第二遍,一直用小火防止外皮焦糊
  • 9.炸至鱼通体深黄色捞出鱼盘中,尾巴向上放
  • 10.另起一锅,放入少许的油,小火,温热的时候放入蒜炒香
  • 11.闻到蒜味的时候放入半碗清水,番茄酱2大勺、米醋2大勺、白糖2大勺、生抽1小勺煮开
  • 12.另倒入淀粉小半碗、搅拌均匀后加入1/3盐,再次煮开即可关火
  • 13..趁热将酸甜汁浇在鱼身上,即可上桌。
