答应儿子的,做糖饼,虽迟但到,无数次失败以后,总算掌握了要领,现在成功率100%~~~

Steps to make 糖饼

  • 1.准备白砂糖+食用小苏打(碳酸氢钠)+形状模具。
  • 2.20g白砂糖不用加水,小火直接加热,勺子搅拌至糖完全融化,无颗粒,微黄即可。(可将锅离火远一点,变成焦糖色的话,糖饼会发苦。)
  • 3.糖液离火迅速加入0.2g小苏打粉(大约三颗米粒大小),搅拌均匀,糖液体积会膨胀。(小苏打放少了,糖饼不成功,放多了,糖饼会有苦味。)
  • 4.迅速将糖液倒在硅油纸上。(下面最好是木桌,传热慢一点,凝固之前便于造型。)
  • 5.糖液尽量成圆形。
  • 6.盖上一层硅油纸,压平。(注意控制力度,防止糖饼压得过薄。)
  • 7.用手感觉糖饼温度,可不时揭开硅油纸一角查看,控制在硅油纸刚好能撕下来的时候,这是成败的关键。(几秒时间错过,糖饼立马硬化,没法压出形状。)
  • 8.迅速撕开硅油纸,拿出形状模具压花。
  • 9.小心取出形状模具,并套上透明袋子,糖饼很容易受潮。
  • 10.记得轻拿轻放,糖饼易碎。
  • 11.做了五个形状的糖饼。
  • 12.开始挑战吧!
