江南美味—无锡排骨
无锡排骨的特点是油而不腻,酥软香甜,咸甜调和,肉美汁鲜,具有吴中菜肴风味。

无锡排骨是名闻中外的无锡名菜之一,也是具有地方风味的旅游食品。无锡排骨,传统名称叫“无锡肉骨头”。20世纪80年代,为了方便作为旅游食品来推广而改名“无锡排骨”。

无锡排骨(肉骨头)兴起于清朝的光绪年间(1872-1909年)

Steps to make 江南美味—无锡排骨

  • 1.所需要的材料如图所示
  • 2.将排骨洗净,锅内放入冷水,将肉焯水取出备用;
  • 3.炒锅中倒入油,加热至5成热时倒入排骨翻炒,直至二面金黄;
  • 4.所有的调料装入纱布袋;
  • 5.加入热水,没过肉,加入料酒、姜片、纱布袋
  • 6.小火慢炖2个小时后大火收汁。
