自来红又叫做“丰收红”,有着良好的寓意。是古老的京式月饼之一,当许多传统的点心越来越淡出我们视线的时候,自来红却以一种顽固的姿态坚持着……

  • 普通面粉200克
  • 白糖10克
  • 麦芽糖10克
  • 香油90克
  • 小苏打1克
  • 开水76克
  • 白糖80克
  • 香油46克
  • 熟面粉40克
  • 糖桂花10克
  • 冰糖10克
  • 熟芝麻10克
  • 核桃仁30克
  • 葡萄干15克

Steps to make 老北京自来红

  • 1.把白糖、麦芽糖、小苏打、开水倒入盆里搅拌至糖融化,倒入香油继续搅拌至水油融合
  • 2.加入面粉和成团,转移到面板上继续用力揉20分钟,直到面团变的光滑有弹性
  • 3.把揉好的面团擀成长方形,由两边向中间对折
  • 4.再次由两边往中间对折,再次擀成长方形如此重复4次4折,直到面团非常光滑平整
  • 5.折好的面团再次擀成长方形,从一端卷起成圆筒状
  • 6.40克面粉放入无油无水的锅中,中小火翻炒至微微变黄备用
  • 7.白芝麻炒香备用
  • 8.核桃、葡萄干切小丁,冰糖用刀背轻轻敲成小块
  • 9.把白糖、香油、糖桂花、熟面粉、冰糖、核桃、白芝麻、葡萄干混合,用手抓匀备用
  • 10.把馅料和面团都平均分成10份
  • 11.取一个面团包住一份馅料,虎口收紧成圆形,放在烤盘上
  • 12.找一个瓶盖蘸上红色色素在做好的月饼上印一下。烤箱中层上下火200度,烤25分钟左右直到月饼变成棕红色即可
