月饼馅料自己做--------【香滑绿豆沙】
前些时候买了一斤去皮的绿豆,本打算做绿豆糕的,初一推十五,一直就没做。马上中秋节了,前天赶快煮绿豆炒绿豆沙,做绿豆沙的月饼,还没吃过绿豆沙的月饼呢,一直都是做红豆沙的月饼,炒熟的绿豆沙我很喜欢,很香很滑的口感,细腻绵软,糖和油的量控制的很好,昨天就做了月饼,今天回油回的不错,到现在我已经吃了两块月饼了,朋友们先尝尝我炒的绿豆沙,明天给大家上绿豆沙月饼,保准大家喜欢!

Steps to make 月饼馅料自己做--------【香滑绿豆沙】

  • 1.去皮绿豆洗净浸泡2小时;
  • 2.放入高压锅中,加入没过绿豆1厘米的水;
  • 3.盖好锅盖,开中火;
  • 4.上汽后转小火15分钟关火,消气后打开锅盖;
  • 5.趁热用木铲压碎;
  • 6.移入炒锅中,放入大概50克白糖,适量玉米油,小火不停翻炒,直至糖溶化,油被豆沙吸收;
  • 7.再放入50克糖,适量玉米油,小火炒至糖化油被吸收;
  • 8.接着第三次放入50克糖,适量玉米油,炒至糖和油全部吸收;
  • 9.第四次放入50克糖,适量玉米油,继续翻炒至糖溶化油被吸收,此时还不太把团,豆沙很粘铲子;
  • 10.尝尝甜度,觉得不够甜,又加了30克糖,继续翻炒;
  • 11. 炒至绿豆沙抱团,搅拌起来比较费力时,成品很干,绿豆沙就炒好了;
  • 12.给绿豆沙造个型,不错吧!
