烤鸭
自己在家做烤鸭,只有用烤箱烤,工艺和全聚德不同,所以根本没法和全聚德的做比较。但是不是北京人,要吃上正宗的全聚德不容易,那么又想吃烤鸭,就只能自己动手啦,虽然没法和全聚德的比,但是自己做的味道也是不错的,皮也是脆脆的,也蛮好吃的哩。自己做的胜在想吃就可以做,方便放心。

  • 白条鸭半只
  • 蚝油15g
  • 特级酱油15g
  • 五香粉2g
  • 4g
  • 胡椒粉2g
  • 5g
  • 蜂蜜2勺
  • 白醋1勺

Steps to make 烤鸭

  • 1.我家烤箱是35升的,感觉烤整只的鸭怕烤糊,于是就烤了半只。清洗干净后,用厨房纸把里外的水分都沾干净
  • 2.把蚝油、特级酱油(或者用特级生抽)、五香粉、胡椒粉、盐和糖全部放入
  • 3.用钢针在肉厚的地方扎眼,以便于入味,然后用手反复揉搓,让调味料能均匀渗透,然后盖上保鲜膜冷藏腌制半天
  • 4.腌制好的鸭稍微风干表面
  • 5.蜂蜜和白醋兑一起搅拌均匀,加醋是为了表皮发脆,不喜欢脆皮的可以把白醋换成水。
  • 6.表面刷上蜂蜜醋
  • 7.烤箱180度预热后烤20分钟
  • 8.取出表面再刷一层蜂蜜醋,膀尖和腿尖用锡纸包上以免烤糊
  • 9.烤箱温度调高到200度,放下面一层,继续烤40分钟
  • 10.烤好的鸭切片享用吧。
