软溜草鱼片
在中学时期,跟着学校宣传队,去厦门的一个小鱼村演出,演出完,鱼民煮晚饭给我们吃----带鱼煮面条。这是我第一次吃鱼煮面条。
后来吃的“软溜草鱼片”,其实也就是鱼肉拌面条。因为加了香菇青椒,味道更香了。
软溜草鱼片---很典型的闽菜,亦菜亦饭,好吃!

Steps to make 软溜草鱼片

  • 1.准备食才鱼块去鳞,洗净。香菇用温水泡好。青椒洗净。
  • 2.青椒去籽切丁。香菇切丁.草鱼去骨头片成薄片,用盐,料酒拌匀。
  • 3.面条放开水煮熟,凉凉,用麻油,盐,搅拌好,摊在大盘。
  • 4.锅里水烧开,将鱼放入大碗,用开水冲入烫片刻。水倒掉,再用开水冲一遍,烫熟。
  • 5.把鱼片摆在面条上,撒上胡椒粉。
  • 6.锅里放油,入葱、蒜、香菇煸炒。
  • 7.放入青椒,剁椒煸炒。
  • 8.放料酒,鲜抽、盐,糖、醋、胡椒粉、麻油,鸡精,再用水淀粉勾芡。
  • 9.浇在鱼上即可。
