月饼~广式月饼
广式月饼是市面上比较普遍的月饼之一,皮薄软糯,馅大是它的特点。但也有缺点。市面上的广式月饼,又甜又腻,还有很多添加剂,最尴尬的是,不管什么口味,吃起来感觉都是一个味*。真的不太适合小朋友、老人和需要注意饮食的人群吃。
从前我也是不太喜欢吃月饼的,但是自从玩烘焙,就爱上自己做的月饼了,不仅甜度可以自己掌握,最重要的是真材实料,每种馅料都有它独特的味道。

  • 转化糖浆960g
  • 花生油300g
  • 碱水25g
  • 中筋面粉1350g
  • 蛋黄液一个

Steps to make 月饼~广式月饼

  • 1.糖浆,油,碱水 混合至乳化。
  • 2.面粉加入糖浆了搅拌至无明显干粉状,用保鲜膜包好醒面两小时以上。
  • 3.醒面的时候我们来准备馅料,60g一个揉成球。(我这里准备了:蛋黄莲蓉,枣泥核桃,椰蓉蔓越莓,黑芝麻,板栗,豆沙,五仁,奶黄)所有馅都是自己做的,低糖低油,好吃又健康。
  • 4.醒好的面团,分成40g一个的小面团。
  • 5.全部包好后,烤箱200°预热。月饼入模做好造型,进炉烤10分钟。
  • 6.烤十分钟拿出,稍凉一下,刷蛋黄液。再转170°,继续烤10分钟。
  • 7.看上色情况,上色均匀就可以拿出晾凉。
