豆角炒茄子
冰箱里剩了一把豆角,放了几天了,用来炒一盘菜吧有点少,煮着吃吧大家又都不喜欢,刚好今天买了茄子回来,于是就做了一道家常版的豆角烧茄子,这菜一出锅,大人孩子都抢着吃,很多人不喜欢吃这个菜,嫌它太油了,其实秋天正是贴秋膘的时候,我们平时的饭菜都很清淡,偶尔吃吃这种重油的食物,开胃解馋,超级过瘾,我这个减肥的人,也忍不住吃了一大碗饭下肚。

Steps to make 豆角炒茄子

  • 1.豆角洗干净,切去两端,然后切成自己喜欢的长短备用。
  • 2.茄子去蒂,切成长条状,放入容器中,撒上一层盐抓匀,稍微腌制一下就能淅出多余的水分了。
  • 3.大蒜多一点,拍碎切小,生姜切小,剁辣椒我也准备了一些,不喜欢吃可以换成小米辣或者青红椒。
  • 4.锅中稍微多倒一些油,比平时炒菜稍微多一些就行,油温6成热下入豆角,炸至豆角焦干。饭店里会用一大锅油,那种方法不太适合家常。
  • 5.豆角炸好以后捞出来,把茄子的水分用手挤干下,然后下入茄子,炸茄子的时候,油温要高,这样炸出来的茄子颜色紫,还不会吸收太多油。
  • 6.茄子变软以后加入剁辣椒,大蒜,生姜,炒出香味。
  • 7.然后倒入事先炸好的豆角。
  • 8.加入料酒,水淀粉,白砂糖,胡椒粉,翻炒均匀就可以出锅。
