【爸爸的心头好】麻婆豆腐
爸爸是我们家厨艺最好的,从我小时候记事起,家里就常常是爸爸下厨。不管是家常菜,还是宴客菜,爸爸都做得非常好吃。
因此,邻居们家里有客人,常常会请爸爸去下厨。记得有次,爸爸做了一道鱼,邻居家的客人竟然感叹:“从未吃过这么好吃的鱼!”可想而知,那条鱼最后都游进了那人的胃里。
但也许是经常下厨的原因,爸爸对吃美食的兴趣不大。总说做了这么多菜,闻也闻饱了。所以爸爸总是吃得很少,用他的话来说,两筷子菜就能下一碗饭。
凡事总有例外,爸爸的“例外”就是豆腐。哪顿做了豆腐,他一人就能吃一大盘。
得知爸爸要来我们家,我特意去超市买了豆腐,准备做道【麻婆豆腐】。做出来的味道蛮好,爸爸很喜欢。可拍出来的照片就让人难过了,厨房的灯太高太暗,照片比较模糊。世事难完美,大概如此。

  • 嫩豆腐2块
  • 植物油2大勺
  • 小米辣8个
  • 老姜3片
  • 大蒜4瓣
  • 郫县豆瓣酱1大勺
  • 干辣椒6个
  • 花椒20粒
  • 2小勺
  • 料酒5毫升
  • 生抽15毫升
  • 水淀粉10毫升
  • 辣椒粉20毫升
  • 胡椒粉2.5毫升
  • 花椒粉2.5毫升

Steps to make 【爸爸的心头好】麻婆豆腐

  • 1.猪肉洗净切片,用少许盐、料酒抓匀,腌制10分钟左右;起油锅断生,调入适量郫县豆瓣酱炒香,盛出;
  • 2.小米辣去蒂,洗净切圈;
  • 3.嫩豆腐洗净,切小方块;
  • 4.老姜洗净,切丝;大蒜剥去蒜衣,对半切开;
  • 5.炒锅置火上,倒入适量植物油烧热,放入郫县豆瓣酱炒香,再放入干辣椒段,花椒炒香;
  • 6.倒入适量清水,放入姜丝、蒜瓣,生抽,辣椒粉、小米辣烧开;
  • 7.放入豆腐块,盖上盖子煮至水滚;
  • 8.豆腐煮滚后,再煮几分钟;
  • 9.调入适量胡椒粉;
  • 10.放入第一步炒好的猪肉,翻炒均匀;酌情调入适量盐;起锅前兑入适量水淀粉;
  • 11.关火,装盘出锅后,在豆腐表面撒一层花椒粉。
