Steps to make 香辣酥皮猪蹄

  • 1.猪蹄冷水下锅,放入葱姜、黄酒、醋煮开,撇掉血沫。加入7~8克盐、5克鸡精,10克白糖。
  • 2.撇掉血沫,放入7~8课盐、5克鸡精、10克白糖,倒入高压锅煮30分钟以上。
  • 3.煮熟的猪蹄盛出晾凉(猪蹄表面可以摸蜂蜜晾凉)。
  • 4.锅内放少许油,猪蹄皮面朝下煎炸,炸焦后翻面,皮面上撒上一层孜然粉、一层辣椒面和少许盐。
  • 5.两面煎好后盛出,成品图。
