紫薯冰皮月饼
有段时间没有发日志了,最近的事情太多,但是无论怎样也档不住我对美食的梦想,只要有点时间都会到美食天下来看看,眼看中秋就要到了,看见很多的美食家做着各种各样的月饼,我也经不住对月饼的诱惑,特别是冰皮月饼,它冰冰凉晾,QQ软软的口感一直是我最喜欢的,而且它不用烤制,比起广式月饼来说,既节省时间又美味健康
我在网上搜了一些冰皮月饼的配方,配方太多了,我不知该选择哪个,最后只好凭着感觉走,有的配方里要用粘米粉,刚好超市里有卖的,就买了一些,糯米粉是最好买的,最难的就是澄粉了,也叫小麦淀粉,好多大超市看了都没有,准备网购一些,也就在这时候我无意到我家附近的小卖部去买东西,刚好就看见了小麦淀粉,这真是——众里寻他千百度,暮然回首,那它却在灯火阑珊处

  • 大米粉40克
  • 小麦淀粉30克
  • 紫薯2个
  • 牛奶160克
  • 玉米油20克
  • 白糖40克

Steps to make 紫薯冰皮月饼

  • 1.原料图
  • 2.将紫薯去皮后切成片放蒸锅里蒸上15-20分钟左右
  • 3.蒸好后再捣成泥状
  • 4.锅里放适量的油将紫薯泥炒成不粘锅,翻沙稍硬即可
  • 5.另将适量糯米粉再锅里炒成浅黄色,也就是糕粉(手粉)
  • 6.将糯米粉,大米粉,小麦淀粉放容器里拌匀后过筛
  • 7.牛奶玉米油白糖混合后倒入粉内中搅拌均匀
  • 8.将这些米糊放蒸锅里蒸上20分钟,取出后放凉(因我买的大米粉是散装的,蒸好后发现里面有其他粉类的颗粒)也没有关系啦
  • 9.晾凉后,取上一半的冰皮加上抹茶粉揉成团(要多揉一会,会发现冰皮会变得很光滑而不粘手
  • 10.将冰皮分成几份,我是按皮馅1:1来算的,各25克
  • 11.将紫薯馅包上
  • 12.放进月饼模里,洒少许糕粉,压出花纹即可
