回锅肉
很久没有来过美食天下,因为一年多脸过敏忌口,所以也没做什么菜,现在恢复了好多,除了辣椒不能吃其它都ok了,所以今天给大家分享一个不辣的回锅肉~P.S.想吃辣的宝宝们只需在炒酱料的时候加入郫县豆瓣酱即可,不懂的可以加我微信呦**

Details of ingredients

  • 五花肉500g
  • 青蒜3颗
  • 太空椒1个
  • 红彩椒1个
  • 豆豉1匙
  • 甜面酱1匙
  • 白糖1匙
  • 3瓣
  • 大葱0.5颗
  • 花椒少量
  • 生抽1匙
  • 大料少量

Steps to make 回锅肉

  • 1.主图食材准备,五花肉我买的是带排骨肋条的位置,感觉会比纯五花肉好吃。
  • 2.准备一锅冷水,我的锅有点小,大家可以找个大点的,最好能淹没食材的,五花肉带皮洗净,冷水下锅。放葱姜花椒大料,可适量加料酒去腥(我脸过敏不能用酒类所以我没放),约15-20分钟用筷子扎进去能扎透即可捞出凉凉后切薄片。
  • 3.煮肉的过程中我们准备配菜,如图洗净切好待用。
  • 4.锅中留少于油(一定要少,因为炒肉会出很多油)下肉翻炒至变透明,两边卷起。捞出装盘待用。
  • 5.锅底留少油,葱姜蒜爆锅,爆出香味P.S.如果想吃四川回锅肉接下来就放两匙郫县豆瓣酱炒出红油,其它步骤顺序相同
  • 6.依次放青红椒,豆豉,炒五分熟放糖,甜面酱,少于生抽,加肉大火翻炒。
  • 7.炒匀后加入青蒜,少鸡精出锅。
  • 8.不辣的做法孩子也能吃四川回锅肉的香也是经典。
