  • 白胡椒粉少许
  • 食盐少许

Steps to make 黄金锤(香酥鸡翅根)

  • 1.准备食材,鸡翅根10个、鸡蛋1个、淀粉(面粉)适量、面包糠1碗调料:生抽2茶匙、蚝油1茶匙、黄酒1茶匙、大蒜5瓣、姜10克、白糖10克、白胡椒粉少许、食盐少许。
  • 2.处理好鸡翅根后准备腌料;大蒜切末、姜切片。
  • 3.鸡翅根洗净后进行处理整形,先用剪刀在骨头尾部剪断连着的皮和筋膜。
  • 4.剪断筋膜后沿着骨头的方向往下推,尽量推到最底部,方便出形状。
  • 5.剪好的应该是到这个位置,连皮带肉整个翻过去,把有鸡皮的一面完全翻到里边。所有鸡翅根依次这样做好。
  • 6.蚝油、生抽、黄酒、姜蒜等所有调料放入处理好的鸡翅根中。
  • 7.充分抓匀后盖上保鲜膜放入冰箱冷藏腌渍一个晚上入味;(腌渍最少两小时以上)。
  • 8.鸡蛋一枚打散 再准备适量的淀粉(面粉也可)和面包糠。拿出一个腌渍好的翅根,从左到右先裹面粉、托上蛋液、裹满面包糠。
  • 9.所有的鸡翅根依次做好,码在垫了锡纸烤盘上,刷少许食用油。(表面刷食用油烤出来的颜色金灿灿的,不刷油颜色要浅一些)
  • 10.烤箱200度预热五分钟,将烤盘放入预热好的烤箱中下层,烤20分钟。
  • 11.成品!
