Steps to make 炸酱面

  • 1.炸酱材料集合图。两个鸡蛋打散加1小勺黄酒去腥。洋葱切碎。黄豆酱和甜面酱在碗中混合。肉馅100克。
  • 2.鸡蛋炒成蛋碎。
  • 3.平底锅烧热放适量色拉油,油热放入肉馅翻炒。
  • 4.炒至肉馅变色,加入洋葱碎翻炒均匀,炒至洋葱香味飘出。
  • 5.加入酱料翻炒均匀,香味飘出。
  • 6.加入蛋碎翻炒均匀。
  • 7.加入清水适量,小火煮5分钟左右,用铲子不断搅拌,以免糊锅。煮至汤汁粘稠,加入香油增香,撒香葱碎。
  • 8.炸好的鸡蛋肉酱盛出备用。
  • 9.绿豆芽清洗干净,摘去根部,胡萝卜切丝、黄瓜切丝。
  • 10.豆芽焯水后立即过凉,沥干水分。豆芽断生即可,保持爽脆口感。
  • 11.胡萝卜焯水,过凉,沥干水分。
  • 12.1个鸡蛋煎成蛋皮后切丝。
  • 13.煮锅中水烧开下入面条煮熟。
  • 14.捞起面条过凉,洗去粘稠,沥干水分。
  • 15.面条盛在碗中,摆上黄瓜丝、胡萝卜丝、豆芽、蛋皮丝、炸酱,拌匀即可。
