莲蓉蛋黄月饼

Steps to make 莲蓉蛋黄月饼

  • 1.把转化糖浆、花生油放入干净的不锈钢盆中,然后筛入低筋面粉。
  • 2.碱和水按1:4的比例,配成枧水。
  • 3.在面盆中加入枧水,揉成光滑的面团,用保鲜膜包好,室温静置1小时。
  • 4.咸鸭蛋黄用色拉油浸泡30分钟,然后把蛋黄凡在烤盘上,放入烤箱,160度,烤10分钟。
  • 5.把莲蓉馅分成若干个小等分。
  • 6.用莲蓉馅把咸蛋黄包好,成蛋黄莲蓉馅。
  • 7.把静置好的面团分割成小面团。
  • 8.用小面团把蛋黄莲蓉馅包好,收口朝下。
  • 9.把包好馅的小面团用月饼模具压成月饼生坯。
  • 10.把月饼生坯放入烤盘中,表面喷上水。烤箱150度预热5分钟,烤盘放入中层。烤箱160度,烤15分钟,月饼定型。取出月饼放凉后,刷蛋黄液,再放入烤箱,烤5分钟。
  • 11.烤好的月饼3天以后食用,因为月饼有回油期。
