【酸辣土豆丝】--- 不败的经典家常菜
酸辣土豆丝,一个不败的经典家常菜,无论什么时候上桌都能一致得到家人的喜欢,相信喜欢它的,不止是我们家而已。

看似一盘家常小炒的酸辣土豆丝并没有什么难度,但要做得清清爽爽、漂漂亮亮,也是需要一点小技巧的。

一:土豆要选择黄心的脆土豆,而不是粉土豆,选择黄心是因为色泽更好看,如果是白土豆的话就比较逊色了。

二:切土豆丝的时候要尽量切得粗细均匀。

三:全程大火快炒,不要加水。

另外,如果家里有腌制泡椒的话,可以加些泡椒(切成粗丝),和泡椒水,成菜的味道会让你惊喜!

Steps to make 【酸辣土豆丝】--- 不败的经典家常菜

  • 1.准备好原料和配料。
  • 2.红尖椒去籽斜刀切丝,香葱、姜、蒜切丝,干红椒斜刀剪成条状,去籽。
  • 3.土豆先找个较稳当的位置摆放好,竖刀切成一毫米左右的片,一片挨着一片,不要乱。
  • 4.从右往左把土豆片均匀的按扁平.
  • 5.然后从头切细丝。(按扁平了切起来才稳当,如果厚厚的切,会影响刀工)
  • 6.依次全部切完。
  • 7.切好的土豆放入清水里浸泡去淀粉,捞出沥干水分备用。(我这个是浸泡好了的,开始浸泡的时候我有淀粉所以水会比较浑浊)
  • 8.炒锅里加入适量油(不要太少了,可以较平时炒菜稍多一点点),下入花椒中火炸香,然后捞出。(花椒可以过一下水,再用厨房纸吸干水分,这样不容易炸焦,而且很香)
  • 9.下入姜、蒜、干红椒煸出香味,转大火。
  • 10.下入土豆丝.
  • 11.快速翻炒片刻,调入泡椒水。
  • 12.调入醋继续翻炒均匀。
  • 13.调入盐翻炒均匀。
  • 14.最后加入红椒子和香葱丝翻炒均匀,关火,调入少许鸡精炒匀即可出锅。
