Steps to make 西湖醋鱼

  • 1.把鱼洗干净后对半剖开。
  • 2.摘去鳃下的鱼牙齿。
  • 3.把小半片鱼背朝下,在背脊上用刀划一长刀,不要切断。
  • 4.把连尾巴的大片背朝上,用刀斜切3刀,第1,2刀只切肉,第3刀切断鱼骨头。
  • 5.锅内装满热水,把鱼轻放,用筷子竖起鱼鳍。
  • 6.大火煮5分钟左右把鱼盛出装盘,淋上少许生抽和酒,撒上姜末。
  • 7.净锅里加半碗水,加一小勺老抽,一大勺糖,煮开后加上适量醋,加入生粉水勾芡(糖醋比例基本是1比1)淋在鱼身上即可。
