老干妈干煸肉丝油辣椒,相当之下饭,不过有三个缺点:贵、油多、肉少。
那怎么办呢,自己做啊,嘿嘿
不过自己做的就不是老干妈干煸肉丝油辣椒了,既然是姐做的,那就是老干姐干煸肉丝油辣椒O(∩_∩)O哈哈~

做好之后放冰箱冷藏,应该可以放一两周,一周应该没问题,所以一次可以多做一点。油多的话,保存的时间就长一些。
我用了不到一斤肉,成本大概20块,成品有老干妈两三瓶那么多吧,因为我油放的少,是纯固形物的量,油少肉多又实惠。

    Steps to make 老干姐干煸肉丝油辣椒

    • 1.干辣椒擦干净剪成段、加点花椒。
    • 2.黑芝麻白芝麻适量,多点少点都可以。
    • 3.瘦肉切丝,或者小丁。喜欢吃肉的,可以切的稍大块一些。
    • 4.豆豉一包剁碎。
    • 5.干辣椒和花椒入锅,小火炒变色。
    • 6.盛出放凉。
    • 7.芝麻入锅,小火炒香。
    • 8.盛出放凉。
    • 9.炒好的辣椒和花椒用搅拌机磨碎。不喜欢太辣的话,可以把辣椒籽挑出,只用辣椒皮。
    • 10.炒好的芝麻也用搅拌机磨碎。不用磨很细。
    • 11.磨好的辣椒和芝麻粉。
    • 12.准备一瓶半甜面酱,我正好有一瓶旅游时带回来的猪肉酱,冒充甜面酱一起用了。
    • 13.锅中多放点油,大概能没过猪肉的量。
    • 14.猪肉丝入锅,中小火煸。
    • 15.用铲子翻一翻,避免糊底。
    • 16.煸至猪肉变干。这时如果觉得油多,可以倒出一部分,但是也不要留太少,后面要加入辣椒芝麻粉,会吸油的。
    • 17.加入甜面酱,炒匀。
    • 18.加豆豉、孜然粉、十三香、白糖炒匀。
    • 19.加入芝麻粉和辣椒粉,炒匀。
    • 20.关火放凉。
